Ingredients
- MARINADE:
- 1/2 bunch cilantro
- zest of 1 lemon
- juice of 1 lemon
- juice of 2 limes
- 3 cloves minced garlic
- 1 tsp cumin
- 1 tsp salt
- 1 tsp pepper
- 3 tbsp olive oil
- Chicken 3 thighs
- CUCUMBER PICO
- 1/2 cucumber diced finely
- 2 roma tomatoes diced finely
- salt to taste
- juice of 1/2 lime
- hot sauce 3 shakes (optional)
Instructions
Marinate the chicken in the fridge by mixing the chopped cilantro, zest, citrus juice, garlic, cumin, salt, pepper and olive oil. Refrigerate for at least 30 minutes to 4 hours.Â
Preheat oven to 375 degrees F.Â
Mix diced cucumber, tomatoes, salt, lime juice, and hot sauce for the cucumber salsa. Refrigerate.Â
Place chicken and marinade in baking dish in oven for 30 minutes. Bone-in thighs will take longer, about 45 minutes.Â
Optional: serve over rice.Â
