Date Night Cilantro Citrus Chicken Dinner

Need a fresh take on dinner? This is a flavorful dish that everyone will love. It is very citrus forward. You can serve it over rice or any other grain or just have it with the cucumber salsa! This dish will leave you satisfied and not regretting eating the whole plate! 

Cilantro Citrus Chicken

  • 1/2 bunch cilantro
  • zest of 1 lemon
  • juice of 1 lemon
  • juice of 2 limes
  • 3 cloves minced garlic
  • 1 tsp cumin
  • 1 tsp salt
  • 1 tsp pepper
  • 3 tbsp olive oil
  • Chicken 3 thighs
  • 1/2 cucumber diced finely
  • 2 roma tomatoes diced finely
  • salt to taste
  • juice of 1/2 lime
  • hot sauce 3 shakes (optional)


Marinate the chicken in the fridge by mixing the chopped cilantro, zest, citrus juice, garlic, cumin, salt, pepper and olive oil. Refrigerate for at least 30 minutes to 4 hours. 

Preheat oven to 375 degrees F. 

Mix diced cucumber, tomatoes, salt, lime juice, and hot sauce for the cucumber salsa. Refrigerate. 

Place chicken and marinade in baking dish in oven for 30 minutes. Bone-in thighs will take longer, about 45 minutes. 

Optional: serve over rice.
